Written programs, monitoring, verification and corrective action activities are not available. Additionally, USDA pork dumplings contain soy and are produced prior to vegetable dumplings with no soy. The firm uses equipment (storage bins, knives, filling buckets, mixing machine) with soy and non-soy products. Management states the change from USDA pork dumplings happens daily around 2:30 pm after USDA supervision, then equipment is cleaned and sanitized. Inspectors arrived at 2:45 pm and processing vegetable dumplings was in progress. Information was given to management to conduct a hazard analysis and create a food safety plan.
